THE GLOBAL MAKAAN STORY
Hi there, we’re the Salgaonkars - Varsha and Sanjay.

Global Makaan is a realization of a dream for us.
“Makaan” means food in Malay and fittingly, our
culinary journey began in Singapore in 2000.
Singapore’s vibrancy, vibe, and multicultural ethos
embraced us into its fold. It was the kind of place
where world’s cultures meet and eat.

Over the next decade and a half, we travelled and
tried a ‘smorgasbord’ of cuisines (including Swedish
where the word originates). We savored the flavours and spices
of Southeast Asia —Peranakan, Malay, Indonesian, Thai,
Vietnamese, Cambodian, Cantonese as well as other Asian
cuisines—and seduced our palates with the subtlety of sushi,
sashimi and teppanyaki, ramen, and curry udon.

Every journey and by default the destination became a personal quest into unravelling the secrets of local cuisine.
Having grown up around watching our respective grandmothers and mothers create tantalizing Goan fare over simmering heat, we learned to replicate the vindaloo, shrimp ambot tik (curry) and fish rava fry.
In 2013 we moved to the United States. This next chapter was equally exciting. We fell in love with Texan and Carolinas barbeque, crab cakes and oysters, Maine and Seattle chowders, and Cajun and Creole.

You’ve now read about our gluttonous travels and are probably wondering what it has to do with Global Makaan. You see, sharing these wonderful experiences with you is what we’ve always dreamt of. We have always wanted to fuse the flavors of the East and West.
And that’s why we’ve put together a menu which includes North American staples such as bagels, waffles, and crepes with a delicious twist.
